Hobo Pie Recipe
Hobo pies are individual servings of hamburger, potatoes, carrots & peas. Other vegetables such as onions, celery, zucchini, green peppers, etc can be added. Each person can assemble their own recipe.
Things you'll need:
- Heavy Duty Foil
- A barbecue or campfire with a grill
Ingredients:
- Potatoes, sliced - one per person, or 1/2 per person if large
- Frozen Peas
- Carrots, sliced - about 1 per person
- Hamburger - uncooked - about 1/4 lb per person
- Salt & Pepper
- Butter - about 2 T per person
To assemble:
- Tear off a fairly large piece of foil ... about 3 times the length of the finished packet.
- Add the following in layers:
- Crumbled hamburger
- Sliced potatoes
- Sliced carrots
- Frozen peas
- Other vegetables as desired
- Place slices of butter on top (about 2 T)
- Add sale & pepper, and seasonal salt if desired
- Seal the foil packet by drawing the long ends together and fold excess together down about 1/2" at a time. Seal each end by folding the foil up. Try to seal the packet completely. The ingredients will cook more evenly if the packet is completely sealed.
Cook packets over a BBQ or campfire or medium heat for about 35-40 minutes. Contents are done when potatoes & carrots crush when you pinch the packets. Open them carefully as contents will be hot! Serve with a salad & a glass of wine!
